About the apprenticeship

A Production Chef is responsible for producing dishes using majority pre-prepared ingredients, including some fresh, e.g. salad, and some frozen dishes, e.g. lasagne. Production chefs work as part of a team in time-bound and often challenging kitchen environments. They apply highly methodical organisational skills, energy, accuracy, attention to detail and are mindful of the importance of sustainability and protecting the environment.

Assessment methods

Gateway Requirements

To reach Gateway the employer will need to be satisfied that the apprentice is consistently working at, or above, the occupational competence of the Level 2 Production Chef Standard.

Observation with Questioning

The apprentice will complete a two-and-a-half-hour observation and questions in their workplace carrying out their daily duties. The observational element will take 120 minutes, with 30 minutes for questioning. The following will be observed during the observation:

  • Production of dishes using fresh and pre-prepared ingredients

  • Presentation

  • Teamwork

  • Communication

  • Observance of standard operating procedures to produce and serve food to business standards

  • Use of equipment and technology, including preventative maintenance

  • Adherence to food safety legislation and hygiene management principles

The assessor will also ask at least three questions after the observation.

Interview underpinned by a Portfolio of Evidence

The interview will take place with an Innovate Awarding Assessor and will last for 60 minutes. They will ask at least 10 questions. The apprentice must have access to their portfolio of evidence during the interview. The portfolio itself will not be assessed.

Grading

Each assessment will be graded as Distinction/Pass/Fail and the apprentice will receive an overall grade of Distinction/Merit/Pass/Fail. The last step along the journey is the receipt of the certificate which will be sent to the employer.

Resit costs

Professional Discussion: £250. Observation: £200. On-Demand Test: 1st re-sit free, £50 thereafter.
