About the apprenticeship

A Commis Chef is responsible for preparing and cooking food items from fresh, and finishing refined dishes. Commis Chefs will follow directions from a senior chef to ensure that dishes are produced to order and time. They are responsible for implementing hygiene, health and safety, and food safety legislation and local procedures, including allergen handling.

Assessment methods

Gateway Requirements

To reach Gateway the employer will need to be satisfied that the apprentice is consistently working at, or above, the occupational competence of the Level 2 Commis Chef Standard. At Gateway, apprentices must have completed training towards English and maths qualifications in line with the apprenticeship funding rules. At Gateway, apprentices will submit recipes for the simulated practical and a portfolio of evidence for review.

Simulated Practical with Questions

The apprentice will complete a three-hour simulated practical with questions in a simulated environment that must relate to the apprentice’s natural work environment. Apprentices must prepare a starter, a main, and a dessert. The main course must include at least 1 animal protein prepared from whole, a starch, a sauce, and two vegetables. The starter must have at least 3 elements to the dish. The dessert must have at least 3 elements to the dish. At least 1 dish must showcase seasonal ingredients. Apprentices can select recipes from their employer's menu or elsewhere. The sources of the recipes should be stated. The Innovate Awarding Assessor will also ask at least four questions during the practical assessment.

Interview underpinned by Portfolio

The interview will take place with an Innovate Awarding Assessor and will last for 60 minutes. The Innovate Awarding Assessor will ask at least 10 questions. The apprentice must have access to their portfolio during the interview. The portfolio itself will not be assessed.

Grading

Each assessment will be graded as Distinction/Pass/Fail and the apprentice will receive an overall grade of Distinction/Merit/Pass/Fail. The last step along the journey is the receipt of the certificate which will be sent to the employer.

Professional Discussion: £250. Observation: £725. On-Demand Test: 1st re-sit free, £50 thereafter.
